Spicy Southwest Chicken Wrap
½ whole wheat tortilla
¼ cup cooked and shredded chicken breast
¼ avocado, diced
¼ cup prepared southwest salsa
handful of fresh baby spinach leaves
Instructions:
Place the tortilla on a flat surface. In the center, layer chicken, avocado, salsa, and spinach leaves. Roll up the tortilla tightly and slice in half. Serve immediately.
Eggplant Parmesan
½ cup Italian-seasoned breadcrumbs
¼ cup grated Parmesan cheese
salt and pepper, to taste
¼ teaspoon garlic powder
½ eggplant, sliced into ½-inch rounds
olive oil, for drizzling
¾ cup marinara sauce
½ cup shredded mozzarella cheese
Instructions:
Preheat oven to 400 degrees F. In a shallow bowl, mix together breadcrumbs, Parmesan cheese, salt and pepper, and garlic powder. Dip eggplant slices in the mixture, making sure each slice is well coated. Place on a greased baking sheet and drizzle with olive oil. Bake for about 20 minutes, or until eggplant is tender. Remove from oven and top with marinara sauce and mozzarella cheese. Place back in the oven and bake for an additional five minutes, or until cheese is melted and bubbly.
